Dessert wine (16% alc) made from the plum-like fruit of the persimmon tree. This tree is common in the Ozarks; the fruit is strongly astringent until ripe, turning yellow/orange and becoming sweet and palatable. The fruit was a common dessert item for early Missouri settlers and Osage Indians.
